Goat Cheese and Cucumber Dip

Ingredients: 10 oz. goat cheese 4 tbsp. plain yogurt 1 regular or 2 small cucumbers 1-2 garlic cloves chopped parsley salt and pepper to taste Blend all the ingredients in the food processor until smooth. Serve right away or cover and refrigerate. Enjoy with vegetables, pita bread, crackers or tortilla chips. You may also like  Feta and Avocado Dip  and  Party Dips . Farro Salad With Feta

Farro is a type of ancient Italian hearty grain that is becoming popular again. Some people say that it is the mother of all wheat. Farro is a good source of fiber, protein and iron with a nutty taste. It is great for salads and soups. You can find Italian Farro at Old World Market Naples Ingredients: 1 1/2 cups uncooked farro 2 tomatoes, finely chopped 2 small cucumbers, finely chopped 1/2 red pepper, finely chopped 2 green onions, chopped 1/3 cup olives, finey chopped 1/3 cup chopped parsley feta cheese extra virgin olive oil balsamic vinegar or lemon juice salt, pepper to taste Cook farro according to the package directions. Drain well and set aside. Combine extra virgin olive oil vinegar, salt and pepper until you have desired flavor. Combine farro with chopped vegetables and olives. Toss with the dressing. Add feta cheese and toss again. Serve chilled or at room temperature. Pairs great with Chardonnay. Enjoy!

No Bake Brownies

Dates are  are full of antioxidants and are a good source of fiber and potassium.  They are   among the sweetest fruits in the world and can be used as a natural sweetener for many dessert recipes. Medjool dates are known as the "king of dates". They are soft and big with rich caramel and honey taste. You can find Medjool dates at  Old World Market Naples Ingredients: 2 1/2 cups Medjool dates 1 cup unsweetened cocoa 2 cups walnuts 2 tbsp. coconut oil 1 tsp. cinnamon 1 tsp. vanilla For the topping: 1/2 cup chocolate chips shredded coconut, optional Mix everything in the food processor. Press the mixture in a pan lined with parchment paper. Melt the chocolate chips and pour over the brownies. Sprinkle with shredded coconut. Keep in the freezer for about 15 min., cut into squares and enjoy. You may also like  Salty and Sweet Stuffed Dates - great appetizer for any occasion
