Spinach and Feta Mini Muffins

Ingredients (for 24 mini muffins): 1 cup all purpose flour 3 tsp. baking powder 1/2 tsp. salt 2 eggs 1 cup milk 1/3 cup sunflower oil 3/4 cup chopped fresh spinach 1/2 cup feta, crumbled.  Preheat the oven to 390F. Mix the eggs, milk and oil and add to the dry ingredients. Add chopped spinach and feta cheese. Oil the mini muffin tin and spoon mixture to the top of the cups. Bake  for about 20 min. or until golden. At Old World Market Naples  you can find over 30 different kinds of feta cheese.

Feta and Spinach Swirls

Ingredients: 1 Bella puff pastry sheet 1/2 cup crumbled feta cheese 1/2 cup fresh spinach, chopped 1 egg, beaten Thaw pastry sheet according the pack instructions.  Preheat the oven to 400F. Brush the pastry sheet with egg. Top with feta and spinach and roll the sheet. Cut into 1/2 inch slices.  You can press the slices slightly between your hands to keep the filling into the dough.  Place them on lightly greased baking sheet or parchment paper. Brush with egg and bake for about 15-20 min. or until golden brown. You may also like  Feta and Kashkaval Puff Pastry

Crustless Spinach and Feta Cheese Pie

Perfect combination of spinach and Feta cheese and much easier when you don't have to make a crust.  Serve with green or tomato salad and you'll have a delicious light meal. Ingredients: 6-8 oz fresh baby spinach (well cooked, drained and chopped) 3 eggs 1/2 cup all purpose flour 1/2 tsp baking powder 1/4 tsp salt 2/3 cup reduced fat milk 1/2 cup crumbled Feta cheese Preheat the oven to 390 F.  Mix chopped spinach and Feta cheese in the lightly oiled pie plate. In a mixing bowl first add flour, baking powder and salt and then the eggs and milk. Whisk together. Pour the mixture into the pie plate. Spinach and Feta Cheese Soup

I saw this recipe in Bon Appetit Magazine. The original recipe was with chard but I had some baby spinach on hand and I used it as a substitute.  I love greens and this soup is so creamy and hearty. The cheese and the yogurt make it even better. Ingredients for the soup: 2 tbsp. olive oil 1 onion, coarsely chopped 2 garlic cloves, crushed 1 lb spinach, chopped 3 1/2 cups vegetable broth 1 cup parsley, chopped 1/2 cup fresh cilantro, chopped 1/4 cup fresh mint leaves 1 tbsp. dried mint 1 tbsp.  fresh lemon juice salt and pepper to taste For the garnish: 1/2 cup plain Greek yogurt 1/2 cup mixed chopped parsley, cilantro and mint, divided 1/2 cup Feta cheese, crumbled salt and pepper to taste lemon juice (optional) Heat olive oil in the large saucepan over medium heat.
