Baked Cod with Zaatar

Ingredients: 4 cod fillets 1 tbsp extra virgin olive oil 1 tbsp. Zaatar fresh lemon juice salt and pepper to taste Preheat oven to 400F.  Place cod fillets in a baking dish. Brush them with olive oil and sprinkle with Zaatar, salt and pepper. Drizzle with lemon juice. Bake for about 15 min. or until the fish is opaque. Serve with green salad.  Pair with Sauvignon Blanc. Grilled Zaatar Salmon with Yogurt Marinade

Zaatar (Za'atar) is Middle Eastern mix of wild herbs, spices and sesame seeds. Zaatar is good as seasoning to sprinkle on vegetables, salads, meatballs or kebabs and flatbread, mixed into olive oil or yogurt. You can use it to marinate fish or chicken. Ingredients: 4 salmon steaks 1/2 cup Greek yogurt 1 tbsp olive oil 1 tbsp lemon juice 1 garlic clove, minced 1 tbsp Zaatar   1/2 tsp cumin salt and pepper to taste Whisk together yogurt, olive oil, lemon juice, garlic, salt and pepper. Set marinade aside. Mix Zaatar, cumin and salt. Dry the salmon and rub it with the spice mixture.  Place the salmon into marinade. Cover and refrigerate for 40-60 min. Za'atar Puff Pastry Appetizers

Za'atar is good as seasoning to sprinkle on vegetables, salads, meatballs or kebabs and flatbread, mixed into olive oil or yogurt for a zippy dip.   These Za'atar Puffs are tasty and easy to make appetizers great for any occasion.   Ingredients:   1 puff pastry sheet   1/2 cup Za'atar   1/4 cup olive oil   1/4 cup crushed tomatoes   Defrost and spread the puff pastry dough following instructions on the pack. Mix Za'atar, olive oil and the tomatoes. Set aside for a couple of minutes. Spread the mixture over puff dough and roll the dough into a loaf. Cut the loaf into 1/2" slices. Preheat the oven to 400F.
