Farro Salad With Feta

Farro is a type of ancient Italian hearty grain that is becoming popular again. Some people say that it is the mother of all wheat. Farro is a good source of fiber, protein and iron with a nutty taste. It is great for salads and soups. You can find Italian Farro at Old World Market Naples Ingredients: 1 1/2 cups uncooked farro 2 tomatoes, finely chopped 2 small cucumbers, finely chopped 1/2 red pepper, finely chopped 2 green onions, chopped 1/3 cup olives, finey chopped 1/3 cup chopped parsley feta cheese extra virgin olive oil balsamic vinegar or lemon juice salt, pepper to taste Cook farro according to the package directions. Drain well and set aside. Combine extra virgin olive oil vinegar, salt and pepper until you have desired flavor. Combine farro with chopped vegetables and olives. Toss with the dressing. You can find Medjool dates at  Old World Market Naples Ingredients: 2 1/2 cups Medjool dates 1 cup unsweetened cocoa 2 cups walnuts 2 tbsp. coconut oil 1 tsp. cinnamon 1 tsp. vanilla For the topping: 1/2 cup chocolate chips shredded coconut, optional Mix everything in the food processor. Press the mixture in a pan lined with parchment paper. Melt the chocolate chips and pour over the brownies. Sprinkle with shredded coconut. Spinach and Feta Mini Muffins

Ingredients (for 24 mini muffins): 1 cup all purpose flour 3 tsp. baking powder 1/2 tsp. salt 2 eggs 1 cup milk 1/3 cup sunflower oil 3/4 cup chopped fresh spinach 1/2 cup feta, crumbled.  Preheat the oven to 390F. Mix the eggs, milk and oil and add to the dry ingredients. Add chopped spinach and feta cheese. Oil the mini muffin tin and spoon mixture to the top of the cups. Zucchini Bites with Feta Cheese and Danish Bacon

Ingredients (makes 24 bites): 2 grated zucchini 1 cup grated carrots 2 eggs 1/4 cup grated Parmesan cheese 1/2 cup feta cheese, crumbled 1/4 cup smoked Danish bacon, chopped  1/2 cup bread crumbs salt to taste Preheat the oven to 400F. Oil the mini muffin tin. Dry the zucchini and carrots in a paper towel.  Mix all of the ingredients. Fill each muffin cup to the top. Bake for about 20 min. or until golden brown. Puff Pastry Tarts with Pears

Ingredients: 1 sheet Bella puff pastry dough 6 tsp. applesauce 4 pears, peeled and sliced honey and cinnamon, to taste Thaw pastry sheet according to the instructions on the package.  Preheat the oven to 390F Cut the dough into 12 squares. Cover each piece with 1/2 tsp. applesauce.  Top with pear slices. Drizzle with honey and sprinkle cinnamon to taste. Bake for about 15 min. or until edges are golden.
