Mediterranean Style Vegetable Soup

Here is another of my favorite soups. It is tasty and packed with flavors

Ingredients:
1 1/2 cup water
1 cup canned red kidney beans, rinsed and drained
1 28 oz can Italian tomatoes, chopped with their juice  
2 tbsp extra virgin olive oil
2 garlic cloves, finely chopped
2 sprigs fresh thyme
1 onion, finely chopped
1 stalk celery, thinly sliced
1 carrot, diced
2 medium potatoes, peeled and cubed 
1/2 cup parsley, chopped
salt and pepper to taste


Heat oil in saucepan. Add garlic, thyme, onion, celery  carrot and potatoes. Saute until onion is soft. Add water and tomatoes and bring to boil. Simmer until vegetables are tender. Add beans and parsley. Bring back to boil and cook about 3-5 min. Season with salt and pepper to taste.
