Trahana Soup with Halloumi Cheese

Trahana is cracked wheat which has been soaked in milk and then dried. It is very popular in Greek, Turkish, Bulgarian and Albanian cuisine.

There are two types of Trahana - sweet and sour.
Trahana is usually used in soups and stews.




Ingredients:

1 cup Trahana
3-4 tbsp. olive oil
1 onion, finely chopped
4 1/2 cups chicken or vegetable broth
1 medium tomato, diced
1 medium carrot, diced
1 cup Halloumi cheese, cubed
salt and pepper to taste

Soak Trahana in warm water for 15-20 min.
In a large pot heat the olive oil and cook the onion until soft. Add the broth and  bring it to boil. Add tomato, carrot and drained Trahana. Cook on medium-low heat for about 30 min. stirring from time to time. A few minutes before turn the heat off add the Halloumi cheese.
Serve hot. Garnish with fresh parsley and more cheese.
