Tarator - Bulgarian Cold Cucumber Soup
Ingredients (for about 4-6 servings):
3 cucumbers (or 2 European cucumbers), peeled, seeded and finely chopped
4 cups plain yogurt
1 garlic clove, minced
1 cup cold water
1 tbsp vinegar (or lemon juice)
3 tbsp sunflower oil (or extra virgin olive oil)
3 tbsp dill, finely chopped
2/3 cup chopped walnuts, optional
salt and pepper to taste
In a large bowl mix the cucumbers, yogurt, mashed garlic, oil, vinegar, dill and walnuts. Add the water and stir well. Season with salt and pepper to taste.
Refrigerate for 15-30 min.
