Spinach and Feta Mini Muffins

Ingredients (for 24 mini muffins): 1 cup all purpose flour 3 tsp. baking powder 1/2 tsp. salt 2 eggs 1 cup milk 1/3 cup sunflower oil 3/4 cup chopped fresh spinach 1/2 cup feta, crumbled.  Preheat the oven to 390F. Mix the eggs, milk and oil and add to the dry ingredients. Add chopped spinach and feta cheese. Oil the mini muffin tin and spoon mixture to the top of the cups. Zucchini Bites with Feta Cheese and Danish Bacon

Ingredients (makes 24 bites): 2 grated zucchini 1 cup grated carrots 2 eggs 1/4 cup grated Parmesan cheese 1/2 cup feta cheese, crumbled 1/4 cup smoked Danish bacon, chopped  1/2 cup bread crumbs salt to taste Preheat the oven to 400F. Oil the mini muffin tin. Dry the zucchini and carrots in a paper towel.  Mix all of the ingredients. Fill each muffin cup to the top. Bake for about 20 min. or until golden brown. Puff Pastry Tarts with Pears

Ingredients: 1 sheet Bella puff pastry dough 6 tsp. applesauce 4 pears, peeled and sliced honey and cinnamon, to taste Thaw pastry sheet according to the instructions on the package.  Preheat the oven to 390F Cut the dough into 12 squares. Cover each piece with 1/2 tsp. applesauce.  Top with pear slices. Drizzle with honey and sprinkle cinnamon to taste. Bake for about 15 min. or until edges are golden. Feta and Spinach Swirls

Ingredients: 1 Bella puff pastry sheet 1/2 cup crumbled feta cheese 1/2 cup fresh spinach, chopped 1 egg, beaten Thaw pastry sheet according the pack instructions.  Preheat the oven to 400F. Brush the pastry sheet with egg. Top with feta and spinach and roll the sheet. Cut into 1/2 inch slices.  You can press the slices slightly between your hands to keep the filling into the dough.  Place them on lightly greased baking sheet or parchment paper. Brush with egg and bake for about 15-20 min. or until golden brown. You may also like  Feta and Kashkaval Puff Pastry

Quiche with Feta Cheese and Broccoli

Ingredients: Pie Crust: 1 1/2 cups whole wheat flour 1/2 cup butter, melted 1/2 tsp. salt 2 tbsp. milk Filling: 1 1/2 cups milk 4 eggs, beaten 1 cup crumbled feta cheese 15-20 broccoli florets salt and pepper to taste Preheat the oven to 375F. Mix the ingredients for the crust. Gently press the dough and line the bottom and sides of the pie plate. Arrange broccoli florets on top. Mix the rest of the filling ingredients and pour into the crust. Bake for about 40 min. or until filling is set. Serve with green salad and Sauvignon Blanc. Baked Cod with Zaatar

Ingredients: 4 cod fillets 1 tbsp extra virgin olive oil 1 tbsp. Zaatar fresh lemon juice salt and pepper to taste Preheat oven to 400F.  Place cod fillets in a baking dish. Brush them with olive oil and sprinkle with Zaatar, salt and pepper. Drizzle with lemon juice. Bake for about 15 min. or until the fish is opaque. Serve with green salad.  Pair with Sauvignon Blanc. You may also like Grilled Zaatar Salmon with Yogurt Marinade Zaatar (Za'atar) is Middle Eastern mix of wild herbs, spices and sesame seeds. Zaatar is good as seasoning to sprinkle on vegetables, salads, meatballs or kebabs and flatbread, mixed into olive oil or yogurt. You can use it to marinate fish or chicken. Yogurt Ladyfingers Dessert

This is a very easy, no-cook dessert great for hot summer days. You can prepare it in less than 10 minutes.  Ingredients: 1 big package ladyfingers 5-6 cups cups of plain yogurt 4 tbsp. honey 1 tbsp. vanilla strawberries or blueberries In a bowl mix yogurt, honey and vanilla. Place a layer of ladyfingers on the bottom of a glass pan. Spread the half of the yogurt mixture. Place a second layer of ladyfingers and finish with the rest of the yogurt covering them good. If it's necessary add more yogurt and honey. Cover and refrigerate for couple of hours. Top with strawberries and/or blueberries. Pair with a glass of Riesling. https://www.facebook.com/OldWorldMarket
